Adolphe Jacquesson, son of Memmie, invented many improvements in the wine making techniques of the day - lighting the cellars by a system of reflectors - a machine to wash and stopper the bottles - and, most importantly the muselet, patented in 1844. This is the system of wires that keeps corks in place to this day, more than 150 years later.
Today, Jacquesson keeps up the tradition of quality at Dizy, with an annual production of around 350,000 bottles. This small volume allows the House to use non industrialised production methods, to keep the highest standards of quality. Their vinification philosophy is illustrated in three ways :
The source of the grapes, mainly from great growth and 1st growth vineyards in Avize, Ay, Dizy and Hautvillers.
The vinification of a considerable part of the wine in oak vats, a very rare practice nowadays.
The special attention paid to the blending and aging of wines.
Equally, out of respect for tradition, the names of the different blends has hardly changed since the 19th century, when the House offered "Dry Perfection" and "Grand Vin Signature".
