Champagne Ruinart "Don Ruinart" Brut Vintage 2007 - (75cl)

The Dom Ruinart 2007 reveals a young and sparkling color, a light yellow enhanced with green-almond hues.
The bubble is fine and dynamic.
The nose reflects the youth of the wine: notes of white flowers (linden), fresh fruit and citrus (yellow plum, pear nashi, bergamot). The aeration reveals a softer bottom, with notes of Viennese pastry (biscuit, coconut, then hazelnut) underlined by a mineral freshness and mentholée.
Race and length sign the palate, where the freshness of citrus fruits, fresh exotic fruits and a splendid minerality on aromas of flint.
The beautiful freshness of Dom Ruinart 2007 makes it a wonderful aperitif champagne.
Aged by a few months of aging, he will be able to marry dishes where sea and iodized notes will play with its minerality: sea scallops in thin slices marinated with seaweed, tomato water jelly or langoustines marinade and its light cream with kombawa bark.

Tasting note:

Pure chardonnay with three quarters of the white coast and a quarter the mountain of Reims, Dom Ruinart 2002 is a major success with beautiful notes of citrus and linden and a fresh mouth, long, complex and subtle, the dosage is still a little present. It will still gain a lot in aging. Superb!
