The Blanc de Blancs 2007 from Ayala is a cuvée that drew from the heart of the Côte des Blancs grapes coming from the most beautiful plots of the Grand Cru villages of Mesnil-sur-Oger of Cramant and Chouilly.
It is an extremely balanced champagne, which looks nose on notes of juicy fruit, ripe fruit and a floral touch. It is a concentrated and powerful nose.
On the palate, we discover a powerful and straight cuvée, whose complexity and richness are detailed with precision. The minerality of Côte des Blancs is perfectly legible in this vintage. The finish is long, and punctuated with an acid touch. The Blanc de Blancs 2004 of the house Ayala stayed 5 years in cellar before being marketed. It is a perfect wine for an aperitif, but can also escort shellfish or a white fish.
